These days as the PS3 scene reaches maturity there are a number of options available for anyone wanting a working PS3 Jailbreak solution. If you are just looking to run backups and play online with them then the upcoming PS3 ODE releases will be of interest to you. However as there is no concrete release date yet for these devices yet and their expected $100+ price tag when they do finally get released most if not all users will go for the PS3 Custom Firmware solution.
PS3 Jailbreak & PS3 Custom Firmware benefits
While an ODE solution is the best for undetected online play of PS3 backups it will limit the user to just that. Playing backups online. That means no access to the ever growing library of PS3 homebrew that is now available to download. This covers the selection of tools for managing and launching backups such as the ever popular Multiman multi manager tool and various FTP servers to allow you to transfer games and data to or from the console. The other extremely popular branch of homebrew that almost every CFW user will install is Retro Emulators such as the fantastic RetroArch multi machine emulator which will give you access to the 30,000+ game roms available for the SNES, Megadrive, Arcade, Gameboy and the rest

Custom Firmware does have one disadvantage when compared to an ODE solution and that is the increased chance of either and account ban or worst case an actual consoleID ban. Do not use any PS3 cheats online and you should avoid this problem completely. For those that do manage to pick up a console ban there are various PKG files that can be installed to spoof new consoleID's and un-ban the PS3.
Warning over and the benefits surely outweigh the possible problems so

And finally the the disclaimer: Sony updated their terms and conditions quite some time ago to cover the use of Custom Firmware. The main thing you should be aware of is jailbreaking a PS3 with invalidate its warranty so caution should be used before taking this step. That said a quick format of the PS3 and the re-install of the latest OFW will remove any traces of the Custom Firmware ever having been installed on the console.
Happy jailbreaking :)
